CIEH Level 4 Award in Managing Food Safety
This course is aimed at food business owners, managers and trainers and will allow candidates to guide and advise on management of food hygiene, identify areas for legal compliance, make targeted improvements in the food safety systems used in their business and to deliver Level 2 courses in Food Safety to others (following registration with Chartered Institute of Environmental Health (CIEH) and combined with appropriate experience and skills).
The topics covered during the course include:
- bacteriology
- physical contamination of food
- food borne illness
- food storage, temperature control and preservation
- design and construction of equipment and premises
- cleaning and disinfection
- pest control
- personal hygiene
- training strategies
- legislation
- management control techniques
Assessment method
- Half day examination and two written assignments
