Level 3 Award Supervising Food Safety in Catering
This is aimed at those working with food at a supervisory or management level. It is also suitable for those who would like a broader understanding of food hygiene and safety. The course replaces the Intermediate Food Hygiene course.
The topics covered during the course include:
- supervisory management
- legislation
- food poisoning and food borne disease
- bacteriology
- physical, chemical and bacterial contamination
- personal hygiene
- pest control
- cleaning and disinfection
- design and construction of food premises
- food storage and temperature control
- food preservation
Assessment method
- 60 question multiple choice exam taken after the course
