Level 3 Award Supervising Food Safety in Catering

This is aimed at those working with food at a supervisory or management level. It is also suitable for those who would like a broader understanding of food hygiene and safety. The course replaces the Intermediate Food Hygiene course.

The topics covered during the course include:

  • supervisory management
  • legislation
  • food poisoning and food borne disease
  • bacteriology
  • physical, chemical and bacterial contamination
  • personal hygiene
  • pest control
  • cleaning and disinfection
  • design and construction of food premises
  • food storage and temperature control
  • food preservation

Assessment method

  • 60 question multiple choice exam taken after the course

  • 3 days plus half day for exam
