Safer food better business (SFBB)
From 1 January 2006, all food businesses must have a fully documented food safety management system. In other words, you must be able to show what you do to make food that is safe to eat and have this written down. Your system will have to be based on Hazard Analysis and Critical Control Point (HACCP) principles and you will be expected to follow it.
Whilst larger businesses will have these systems in place, many smaller businesses will not. This is why the Food Standards Agency has produced Safer Food Better Business (SFBB) for small caterers. The SFBB pack contains a series of easy to understand safe methods for cross-contamination, cleaning, cooking, chilling and management for small caterers. It is designed to be easily tailored to your business and can be implemented in a relatively short period of time.
It is also free.
The Food Standards Agency has made money available to us to provide help to catering businesses in implementing the packs.
We have been successful in a bid for funding and will be using the money awarded to implement an 18 month coaching programme initially targeting 700 small catering businesses.
If you haven’t got a documented food safety management system in place, we will be writing to you over the next 18 months to invite you to a seminar and provide support through coaching sessions.
